ASPARAGUS FRITTATA

5 eggs
1/4 c. milk
1/4 c. cheese
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. fresh asparagus, cut into 1" pieces
1 Roma tomato, sliced
1/4 c. onion, diced

Preheat oven to 370. Grease 9" pie plate. In medium bowl, whisk
eggs, milk, cheese, salt, and pepper. Stir in asparagus, tomato,
and onion. Pour into pie plate. Bake 20 minutes or until set;
remove from oven and let set 5 minutes before slicing.
