SWEET POTATO PUDDING

3 c. cooked sweet potatoes
1 c. sugar
1 tsp. vanilla
3 eggs
1/4 c. milk
1/2 stick margarine

Beat potatoes, sugar, vanilla, eggs, milk, and margarine until
smooth. Put in casserole dish.

Topping
1 c. brown sugar
1 c. chopped nuts
2 Tbsp. flour
1/2 stick margarine cut into slices

Mix brown sugar, nuts, and flour: sprinkle over sweet potatoes.
Place margarine slices on top of brown sugar mixture. Bake at 350
for 30 minutes or until set.
