FESTIVE SWEET POTATOES

3 c. cooked or baked mashed sweet potatoes
1/2 c. sugar
1/4 c. milk
1/3 c. margarine, melted
1 tsp. vanilla
2 eggs, beaten

Combine ingredients, mixing well. Spoon into a lightly greased 8"
sq. baking dish.

Topping
1 c. flaked coconut
1 c. firmly packed brown sugar
1/3 c. all-purpose flour
1/3 c. margarine, melted
1 c. chopped pecans

Combine ingredients. Sprinkle on top of sweet potatoes. Bake at
375 for 20-25 minutes or until golden brown. Yield: 6 servings
