1 c. onion, chopped
3 Tbsp. margarine
1 c. uncooked rice
2 c. water
2 chicken bouillon cubes
2 3-oz. cans mushrooms
1/2 tsp. salt
dash of pepper
1 1/2 c. shredded cheese
Preheat oven to 350. Cook onion in margarine until tender. Stir in
rice until lightly brown. Add remaining ingredients except cheese.
Bring to a boil; simmer for 5 minutes. Layer rice mixture with 1
c. cheese in 1 1/2 qt. casserole dish. Sprinkle remaining cheese
on top. Bake for 1 hour (may come out sooner).
