3/4 c. cooked, mashed sweet potato (1 large) 1/3 - 1/2 c. milk, as needed 1 1/2 c. all-purpose flour, and more for dusting surface 2 Tbsp. sugar 1 Tbsp. baking powder 1 tsp. salt 6 Tbsp. cold butter, cut into small bits Preheat over to 425. Whisk together sweet potato and 1/3 c. milk. Whisk flour, sugar, baking powder, and salt. Process dry ingredients with butter until like meal. Add wet ingredients and fold, adding more milk, if necessary. Knead 3-4 times until dough comes together; roll out to 1/2" thickness. Cut into desired size and bake on greased sheet for 12-14 minutes. These are great for ham biscuits. May be cut into half dollar size for appetizers.
