ZUCCHINI BREAD

2 eggs
1 c. sugar
2/3 c. oil
1/2 tsp. salt
1 c. grated zucchini
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
3/4 tsp. baking powder
2 tsp. cinnamon
1 small box instant vanilla pudding
1/2 c. nuts
1/2 c. raisins

Mix eggs, sugar, and oil; beat well. Add salt, zucchini, vanilla,
flour, baking soda, baking powder, cinnamon, and pudding; mix well.
Add nuts and raisins. Makes 1 loaf. Bake 1 hour at 350.
Substitute 1 cup pumpkin to make pumpkin bread.
