3/4 c. oil
2 c. sugar
3 tsp. vanilla
2 c. grated zucchini
3 c. flour (if plain add 1 tsp. salt and 1 tsp. baking soda)
3 tsp. cinnamon
1/2 c. chopped nuts (pecans, opt.)
Beat eggs, then add oil, sugar, vanilla, and zucchini. Mix in flour
and cinnamon. Add chopped nuts if desired. Pour into 2 greased
and floured loaf pans. Bake at 325 for 45-60 minutes.
