ZUCCHINI NUT BREAD

2 c. sugar
3 eggs
1 c. vegetable oil
2 tsp. vanilla
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
3 c. zucchini, grated (do not peel)
1 c. raisins
1 1/2 c. chopped nuts
1 1/2 c. coconut

Beat sugar and eggs until creamy. Mix in oil and vanilla. Add all
dry ingredients. Add zucchini and mix. Add raisins, nuts, and
coconut. Bake in greased and floured loaf pans at 350 for 1 hour.
Makes 2 large or 3 small loaves.
