1 c. cottage cheese 3/4 c. butter, melted 4 eggs 2 8.5-oz. pkgs. corn muffin mix 1 10-oz. pkg. frozen chopped broccoli, thawed 1 large onion, chopped 1 1/2 c. shredded cheddar cheese (divided) Preheat oven to 375. Grease 9 x 13 baking dish. Beat cottage cheese, butter, and eggs in large bowl. Stir corn muffin mix into butter mixture until just moistened. Fold in broccoli, onion, and 1 c. cheddar cheese. Pour batter into prepared baking dish and sprinkle remaining 1/2 c. cheddar cheese on top. Bake until toothpick inserted in center comes out clean, 35-40 minutes.
