1 c. corn meal 3/4 tsp. salt 1 c. sugar (I use 1 c.; makes it sweet but can use less) 2 Tbsp. butter 2 c. boiling water 2 eggs 1 c. sweet milk 1 tsp. baking powder Mix meal, salt, and sugar. Add butter and scald with boiling water. Beat eggs until light and fluffy; add to mixture. Add 1/2 c. milk to mixture. To the other 1/2 c. milk, add baking powder. Stir until dissolved, then add to mixture. Bake in moderately hot oven at 350-400 until set and nicely browned. May be baked in Pyrex and served with a spoon. Especially good with butter.
