2 c. self-rising flour 1 tsp. cinnamon 1/2 tsp. nutmeg 1 1/2 c. sugar (divided) 3/4 c. (1 1/2 sticks) salted butter, softened 1 large egg 1/4 c. molasses Preheat oven to 350. In a medium bowl, whisk together flour, cinnamon, and nutmeg. In a shallow bowl, place 1/2 c. sugar and set aside. In another bowl, beat butter and remaining cup of sugar with mixer until combined. Beat in egg and then molasses until combined. Reduce speed to low and gradually add dry ingredients until it forms balls of dough. Pinch off and roll into 1 Tbsp. balls. Use the remaining sugar to roll the balls in and place on cookie sheet about 3 inches apart. Bake until edges of cookies are just firm, about 10 minutes. Bake only one sheet at a time. Cool 1 minute on baking sheet. Transfer to cool completely. Store in airtight container up to 4 days.
