2 c. sugar
1 c. oil
1 tsp. vanilla extract
2 c. all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 tart apples, cored, peeled, and chopped
3/4 c. chopped pecans
Blend eggs, sugar, oil, and vanilla in mixing bowl. In a second
bowl combine flour, cinnamon, baking soda, and salt; add to egg
mixture, mixing well. Fold in apples and pecans. Pour into a
greased 13 x 9 baking pan and bake at 350 for 55-60 minutes or
until toothpick comes out clean. Cool on wire rack.
8 oz. cream cheese, softened
2 Tbsp. butter, softened
2 c. powdered sugar
Combine ingredients thoroughly. Frost cake.
