4 eggs 1/2 c. water or strawberry juice 1/2 c. canola oil 1 box white cake mix 2 tsp. baking powder 3-oz. pkg. strawberry gelatin 3/4 c. strawberries and juice, sweetened Mix eggs, water or juice, and oil in a large bowl. Add cake mix, baking powder, and gelatin. Mix thoroughly. Fold in strawberries and juice. Bake at 350 for 40-45 minutes in a 9 x 13 pan. This cake may also be made in layers. Adjust cooking time if the size of pan is changed. Cool cake and frost. Frosting 1/2 c. butter or 3 oz. pkg. cream cheese 1 box Confectioner's sugar 3/4 c. strawberries and juice Combine ingredients and frost cake. Garnish finished cake with fresh strawberries. If too much juice is used in the icing, it will be runny. This cake tastes like springtime. It's a great cake to prepare for a special picnic. It has been our favorite since early courting days in the late '50's and early '60's.
