OLD-FASHIONED CARROT CAKE


Cake
2 c. sugar
2 c. flour
2 tsp. baking powder
1 1/2 c. vegetable oil
4 eggs
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3/4 c. nuts
3 c. grated carrots (1 lb. bag)

You will need 3 8" cake pans. Mix first 8 ingredients well. Add
nuts and carrots. Bake at 350 for 35-40 minutes. Test with
toothpick or to see if it feels spongy.

Frosting
8 oz. pkg. cream cheese
1 stick margarine
2 tsp. vanilla
1 box 10X powdered sugar
1/2 c. chopped nuts

Beat all ingredients except nuts until creamy. Mix in nuts, then
frost the cake.
