Cake 2 c. sifted all-purpose flour 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 2 c. sugar 1 1/2 c. cooking oil 2 tsp. vanilla 2 c. finely grated raw carrots 1 1/2 c. chopped pecans 1 c. crushed pineapple 3 eggs Mix flour, soda, cinnamon, and salt. Combine sugar, oil, and vanilla and mix with first ingredients. Add carrots, nuts, and pineapple. Mix well. Add eggs one at a time, beating well. Bake at 350 in 9 x 13 sheet cake pan for about 70 minutes. Test for doneness with toothpick in middle. Cream Cheese Icing 8 oz. cream cheese 1 stick butter 1 box confectioner's sugar 1 tsp. vanilla 1/2 c. chopped nuts Mix all ingredients well. Ice cake.
