1 1/2 c. vanilla wafer crumbs 4 Tbsp. melted butter 4 8-oz. blocks cream cheese, softened 1 1/2 c. sugar 3 Tbsp. flour 4 eggs 1 Tbsp. vanilla 1 tsp. lemon extract 8 oz. sour cream Preheat oven to 350. Place a large, shallow pan of water on the lowest rack. Prepare crust by combining wafer crumbs and melted butter in small bowl; mix well. Press onto the bottom and partially up the sides of a 10" spring form pan. Bake in oven for a few minutes to set. In large bowl of electric mixer, add softened cheese, sugar, and flour. Mix just until combined. Add eggs, one at a time, beating after each addition. Add flavorings and sour cream. When batter is consistent, pour into crust. Bake until center has almost completely risen. Turn off oven; do not open oven door while you wait. Remove cheesecake when the oven has completely cooled.
