CARAMEL APPLE CHEESECAKE

Crust
2 c. graham cracker crumbs
1/8 c. brown sugar
1/3 c. butter, melted

Preheat oven to 350. Mix all ingredients. Press into the bottom of
a greased 8" spring form pan. Bake for 5 minutes.

Filling
16 oz. cream cheese, softened
1/4 c. brown sugar
1/4 c. white sugar
2 Tbsp. cornstarch
1 tsp. cinnamon
1/4 tsp. ginger
1 tsp. vanilla extract
2 green apples, peeled and thinly sliced

Mix all ingredients except apples. Spread over the graham cracker
crust, then layer apple slices on top.

Topping
1/4 c. rolled oats
1/4 c. flour
1/4 c. brown sugar
1 tsp. cinnamon
2 Tbsp. butter, melted
caramel sauce

Mix all ingredients except caramel. Sprinkle evenly over apple
layer. Bake 30 minutes. Drizzle on caramel sauce.
