Topping 2 large eggs 3/4 c. plus 1 Tbsp. sugar rind of 1 lemon 3 1/2 Tbsp. lemon juice pinch of salt 2 Tbsp. flour Beat eggs 2 minutes. Add sugar gradually. Beat again 1 minute. Add lemon rind, juice, salt, and flour. Spread over crust. Bake at 350 for 20 minutes. Cut, dipping knife into hot water. Sprinkle with powdered sugar.
