CREAM PUFFS


Pudding
2 3.5-oz. boxes vanilla pudding mix
2 c. heavy cream
1 c. milk

Mix pudding mix, cream, and milk. Cover and refrigerate to set.

Puffs
1 c. water
1/2 c. butter
1 c. all-purpose flour
1/4 tsp. salt
4 eggs

Preheat oven to 425. In a large pot, bring water and butter to a
rolling boil. Stir in flour and salt until mixture forms a ball.
Transfer to large mixing bowl. Using a wooden spoon or stand
mixer, beat in the eggs one at a time, mixing well after each.
Drop by tablespoon onto an ungreased baking sheet. Bake 20-25
minutes until golden brown. Centers should be dry.

When shells are cool, either split and fill them with the pudding
mixture or use a pastry bag to pipe pudding into shells.
