1 1/2 c. milk 2 oz. unsweetened chocolate (or equivalent in cocoa) 1 c. sugar 1 Tbsp. flour few grains of salt 2 Tbsp. butter 1/2 tsp. vanilla Put milk and unsweetened chocolate (or equivalent in cocoa) in saucepan. NOTE: If you use cocoa, put the cocoa powder (3 Tbsp. for each ounce of unsweetened chocolate) plus 1 Tbsp. of butter for each ounce of unsweetened chocolate in the saucepan and allow the butter to melt. Stir butter an cocoa to blend and pour in milk, first just a little, and blend. Pour in rest of milk. If using the block chocolate, heat slowly until the chocolate melts; beat until smooth. Mix sugar, flour, and a few grains of salt. Stir that into the chocolate mixture. Cook until it begins to boil. Lower temperature and cook for 5 minutes, stirring constantly. Remove from heat.
