3 large sweet potatoes
1/4 c. butter
1/2 c. evaporated milk
2 eggs, separated
1 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
1 9" unbaked pie shell
Boil potatoes until tender; peel and mash. Melt butter in milk and
add to potatoes, mixing well. Beat egg whites until stiff; set
aside. Add yolks and remaining ingredients to potatoes. Gently
fold in egg whites. Pour into pie shell. Bake at 350 for 30
minutes or until toothpick inserted in center comes out clean.
