1 c. sugar
3 Tbsp. cocoa
3 Tbsp. cornstarch
2 c milk
1/4 c. butter, melted
3 egg yolks
2 tsp. vanilla
1 baked pie crust
3 egg whites
1/8 tsp. cream of tartar
1/4 c. sugar
1 tsp. vanilla
Combine sugar, cocoa, and cornstarch. In separate bowl, mix milk,
butter and egg yolks. Add to dry mixture. Cook on medium heat,
stirring constantly, until thickened. Add vanilla and stir. Pour
into baked pie crust.
Beat egg whites and cream of tartar until stiff. Slowly add 1/4 c.
sugar, beating constantly. Add 1 tsp. vanilla, beating constantly.
Top pie. Bake at 450 for 10 minutes.
If I am making 2 pies, I make 3 recipes and pour into two pie crusts
to make a really tall pie.
