APPLE PIE

6 c. Granny Smith apples
2/3 c. sugar
1 Tbps. flour
1 Tbsp. lemon juice
1 tsp. grated lemon zest
1/4 tsp. ground cinnamon
2 prepared pie crusts
1 Tbsp butter
2 tsp. milk
1 tsp. sugar

Toss all ingredients together. Spoon into 9-inch glass baking dish
lined with prepared pie crust. Top with 1 Tbsp. butter (cut up)
and cover with second crust. Pinch edges to seal. Make small
slits in top, brush with milk and sprinkle with sugar. Bake at 425
on bottom rack for about 40 minutes.
