1 yellow onion
1 yellow pepper
1 can white hominy
1 can white corn
handful of fresh cilantro
1 rotisserie chicken
1 box chicken stock
2 chopped chipotles in adobo sauce
1 can cannellini beans
1 small can green chilies
couple leaves of fresh basil
Saute onion and yellow bell pepper in olive oil. Add cumin, garlic
powder, turmeric, coriander, peppers, chilies and tomatillos; mix
together. Add chicken stock and broth. If possible, roast poblanos
and then peel, or just chop and add in. Rinse cannellini beans, corn
and hominy in a strainer and add. Clean rotisserie chicken from the
bone; chop or shred. Lastly, add the finely chopped cilantro and
basil to taste.
