1 box orzo 1 bag fresh baby spinach, chopped 1 small red onion, chopped 1 container Feta cheese, crumbled 1 bag pine nuts 1 pkg. sun-dried tomatoes (julienne style or chopped into small pieces) 1 small bottle Italian dressing or balsamic vinaigrette Cook orzo; drain and rinse. Let cool. Add all other ingredients, tossing to mix well. I usually just use 1/2 onion instead of the whole thing. I've also deleted the sun-dried tomatoes and it's still great.
