1 lb. beef onion 1 taco seasoning packet 1 can cream of chicken 1 can Ro-Tel shredded cheese tortillas Extras: rice salsa corn black beans Preheat oven to 350 degrees. Brown beef and onion; drain. Add seasoning with water; simmer. Mix can of cream of chicken with Ro-Tel in separate bowl. Spread beef in center of tortilla and any extras you may want. Fold in sides of tortilla and roll up. Place in greased pan. Spoon cream of chicken/Ro-Tel mixture over rolled enchiladas. Bake at 350 degrees for 20 to 25 minutes.
