Crust: 1 3/4 to 2 1/4 c. all-purpose flour 1 envelope Fleischmann's pizza crust yeast 1 1/2 tsp. sugar 3/4 table salt 2/3 c. very warm water 3 Tbsp. extra virgin olive oil Toppings: 1 Tbsp. extra virgin olive oil 2 boneless, skinless chicken breasts 1/2 c. Sweet Baby Ray's BBQ sauce 1/8 c. red onion 1 c. Mozzarella 1 c. mild Cheddar cheese 2 Tbsp. cilantro Preheat oven to 425 degrees. Combine 1 cup flour, yeast, sugar and salt into large bowl. Add warm water and oil; mix. Add enough flour to make dough soft. Should form a ball. Knead on a floured surface until smooth. Pat out the dough into pizza pan or baking sheet. Form crust ridge by pinching edge of dough. Heat oil in skillet over medium heat. Add chicken and cook 5 minutes, or until cooked through. Cut chicken into bite size pieces. Spread BBQ sauce over crust; top with onion and cheese. Evenly top with pieces of chicken. Bake on lowest rack for 12 to 15 minutes until cheese is bubbly and crust is browned.
