1 lb. boneless pork tenderloin pinch of salt and pepper dry seasonings of your choice* *Thyme, rosemary, brown sugar, garlic powder, onion powder, Italian seasoning or a mixture of all. I rub the tenderloin down in the morning or overnight to cook for dinner and put in refrigerator. First, determine the exact weight of tenderloin. Preheat oven at 500 degrees. Remove tenderloin from fridge. Place seasoned meat in uncovered roasting pan. Bake EXACTLY 5 1/2 minutes per pound. Turn oven off and DO NOT OPEN oven door for 45 minutes to 1 hour, or sooner if you use a probe thermometer and it alerts you. The oven temperature is 140 degrees. Remove from oven and lightly cover with foil. Let rest 5 to 10 minutes. Temperature of meat should be 145 degrees to 150 degrees. Serves 4 to 5.
