1 1/2 lb. link pork sausage
1 onion (medium to large), chopped
1 (8 oz.) jar sliced mushrooms
1 (8 oz.) jar sliced pimentos
1 large bell pepper, chopped
1 large (31 oz.) can whole tomatoes
1 lb. or more elbow macaroni
Cut sausage into 3 to 4 pieces. Fry and partially drain. Saute
onion, mushrooms, pimentos and pepper in butter. Cook, drain and
cool macaroni. Break tomatoes into pieces with hands. Mix together
in large bowl. Pour into a 9 x 13-inch (3-quart) baking dish. Bake
at 350 degrees for 45 minutes to 1 hour.
