2 bags coleslaw
1 can corn, drained*
1 can black beans, rinsed and drained
1 red onion, chopped
1 red pepper, chopped*
1 green pepper, chopped*
1 jalapeno, chopped (more if desired)
1 bunch cilantro, chopped
juice of 2 limes
1 to 2 Tbsp. cumin
1/2 bottle Ranch dressing (just enough to make coleslaw stick
*Mexican corn can be substituted for corn and leave off the bell
peppers if they are not available.
Mix all ingredients. Let it sit for several hours for best flavor.
