2 bags coleslaw 1 can corn, drained* 1 can black beans, rinsed and drained 1 red onion, chopped 1 red pepper, chopped* 1 green pepper, chopped* 1 jalapeno, chopped (more if desired) 1 bunch cilantro, chopped juice of 2 limes 1 to 2 Tbsp. cumin 1/2 bottle Ranch dressing (just enough to make coleslaw stick together) *Mexican corn can be substituted for corn and leave off the bell peppers if they are not available. Mix all ingredients. Let it sit for several hours for best flavor. Serve.
