1 pkg. shredded potatoes 1 small onion, peeled and diced 1 can cream of chicken soup 1 small container sour cream 1 c. shredded Cheddar cheese salt and pepper to taste Combine all ingredients. Place in casserole dish. Top with crushed Ritz crackers, several pats of butter and sprinkle of cheese. Bake at 350 degrees for approximately 35 minutes.
