1 (2 lb.) bag frozen hash brown potatoes 1/2 c. melted margarine 1/2 tsp. black pepper 1/2 tsp. salt 1/2 c. chopped onion 1 c. sour cream 1 can cream of chicken soup 2 c. grated Cheddar cheese Defrost potatoes. Mix all ingredients together. Pour into greased oblong baking dish. Bake at 350 degrees for 45 minutes. Optional Topping: Prior to baking dish, melt 4 tablespoons butter in a separate bowl. Mix about 1 to 2 cups chopped cornflakes with the butter. Sprinkle on top of the dish and bake. Adds a crunchy flavor to the potatoes.
