1/3 c. chopped cooked chicken, beef, pork or shrimp
2 Tbsp. oil
3 c. cooked cold rice (white, brown or instant)
3 green onions, sliced
2 tsp. soy sauce
2 eggs, beaten
1 c. frozen peas/carrots
1 pkg. fried rice seasoning mix
In large skillet, heat oil; stir-fry rice and green onions. Add
seasoning mix and soy sauce; stir-fry 1 minute. Push rice to side;
add eggs and scramble. Stir into rice. Add peas/ carrots and
desired meat. Makes 5 servings.
