6 medium potatoes
1/2 c. margarine or butter
1 tsp. salt
1/2 tsp. pepper
2 c. shredded Cheddar cheese
2 c. sour cream (room temperature)
1/4 c. chopped onions
2 Tbsp. butter
Cook potatoes in skins; cool and peel. Place coarsely chopped or
shredded potatoes in saucepan over low heat. Combine cheese and
butter; stir until melted. Remove from heat; blend in sour cream,
onions, salt and pepper. Add potatoes; stir lightly. Turn into
2-quart casserole dish; dot with margarine or butter. Bake for 25
minutes at 350 degrees.
