4 c. sweet potatoes, cubed
1/2 c. sugar
2 eggs, beaten
1/2 tsp. salt
4 Tbsp. butter, softened
1/2 c. milk
1/2 tsp. vanilla
1/2 c. packed brown sugar
1/3 c. all-purpose flour
3 Tbsp. butter, softened
1/2 c. chopped pecans
Preheat oven to 325 degrees. Put potatoes in a medium pan with water to
cover. Cook over medium heat until tender; drain and mash. In large
bowl, mix sweet potatoes, white sugar, eggs, salt, butter, milk and
vanilla; mix until smooth. Put in 9 x 13 dish. In medium bowl, mix
brown sugar and flour; add butter and pecans. Sprinkle over sweet
potatoes. Bake 30 minutes, or until golden brown.
