6 to 8 large Vidalia onions (other sweet onion may be substituted) 1 stick butter 1 sleeve Ritz crackers 1 (8 oz.) bag grated Parmesan cheese Peel and slice onions into rings. Sauté onions with the butter in a large skillet until soft, approximately 10 minutes. Place onions and butter in a 9 x 13-inch casserole dish. Crush the Ritz crackers; sprinkle on top of the onions followed by the Parmesan. Bake casserole for 20 minutes on 325 degrees, or until brown. Serve warm. I have also done this in the large skillet by just layering the other ingredients on top; put a lid on the skillet to let it all melt together.
