1 stick butter (room temperature)
3/4 c. sugar
2 c. flour (self-rising)
3 large ripe bananas, mashed
1 tsp. vanilla
1/2 c. chopped nuts
Preheat oven to 350 degrees. Grease 9 x 5 x 3-inch loaf pan. Cream butter
and sugar until light and fluffy. Add eggs, one at a time, beating
well after each addition. Add flour to creamed mixture; mix well.
Fold in bananas, vanilla and nuts. Pour mix into pan. Bake 50 to 60
minutes, or until cake tester comes out clean. Cool in pan 10
minutes and then on rack.
