2 c. self-rising cornmeal
1 c. buttermilk
1 c. corn
1/2 c. oil
1 sweet pepper, chopped fine
1/4 tsp. hot pepper
1/4 tsp. salt (optional)
1 c. shredded Cheddar cheese
Mix all ingredients together, except cheese. Pour 1/2 of batter into
hot greased iron skillet; sprinkle with cheese. Cover with other
half of batter. Bake at 375 degrees about 20 minutes, or until golden
