2 1/4 c. oat bran cereal
1 Tbsp. baking powder
1/4 c. brown sugar
1/4 c. chopped walnuts or pecans
1 1/4 c. skim milk
2 very ripe bananas, mashed
2 egg whites
2 Tbsp. vegetable oil
Preheat oven to 450 degrees. Mix the dry ingredients in a large bowl. Mix
the milk, bananas, egg whites and oil in a bowl or blender. Add to
the dry ingredients and mix. Line the muffin pan with paper baking
cups; fill them with batter. Bake for 17 minutes.
