APPLE CAKE

3 c. apples, chopped fine
2 c. sugar
1 c. oil
2 eggs
2 1/2 c. self-rising flour
1 tsp. vanilla
1 tsp. cinnamon
1 c. nuts
1 (6 oz.) pkg. butterscotch chips
butter

Mix sugar and oil. Add eggs. Add flour and spices; mix well. It
will be very thick. Add apples, vanilla and nuts. Pour into a 9 x
13 pan that has been greased and floured. Sprinkle butterscotch
chips and chopped butter over top of batter. Bake at 350 degrees for 30 to
45 minutes, or until it's done in the middle.
