1 3/4 c. sugar
3 whole eggs
3/4 c. oil
2 c. plain flour
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
2 c. diced fresh apples
1 c. chopped pecans

Whisk flour, soda, cinnamon and salt together. Mix together
sugar, eggs and oil. Add other ingredients; mix well. Add apples
and pecans last. Put in greased pan. Bake at 350 degrees for 1 hour.
Cool. Leave in pan, or turn out on cake plate.

Topping (Optional):
1/3 c. oleo
1 c. sugar
1/3 c. buttermilk
1 tsp. vanilla

Melt oleo; add remaining ingredients. Cook on low heat for 5

Note: Punch holes in cake with knife before you pour on topping.
