MICROWAVE CHOCOLATE PIE


Filling:
3 Tbsp. flour
1 c. sugar
3 Tbsp. cocoa
1 1/2 c. milk
3 egg yolks
1 stick margarine, cut into pieces
1 tsp. vanilla
9-inch baked pie shell

Mix flour and sugar together. Add cocoa; mix well. Beat egg yolks
and milk together; add to mixture. Add vanilla and margarine.
Microwave for 2 to 3 minutes and whisk. Repeat until thick (usually
about 9 minutes). Put in a baked 9-inch pie shell.

Meringue:
4 to 5 egg whites
4 Tbsp. sugar

Beat egg whites with electric mixer. While beating egg whites, add
sugar. Beat until peaks. Bake at 425 degrees for 5 minutes, or until
meringue is golden brown.

For coconut pie, omit the cocoa and stir in 1 cup coconut after the
filling is cooked.
