COCONUT CREAM PIE

1 regular pie shell
2/3 c. sugar
1/2 tsp. salt
3 c. whole milk
1 Tbsp. margarine
2 1/2 Tbsp. cornstarch
1 Tbsp. flour
3 egg yolks
1 1/2 tsp. vanilla
3/4 c. coconut

Topping:
3 egg whites
1/4 tsp. cream of tartar
6 Tbsp. sugar
1 tsp. vanilla

Mix sugar, salt, cornstarch and flour. Stir in milk gradually. Cook
over medium heat, stirring constantly. As mixture begins to thicken,
slowly stir in egg yolks; boil for 2 minutes. Boil for another 3
minutes until mixture thickens. Remove and add vanilla, butter and
coconut. Pour into baked pie shell. Sprinkle top of meringue with
coconut. Bake at 250 degrees for 8 to 10 minutes.

Meringue: Mix all ingredients together with a hand mixer until
meringue is consistency you want.
