2 c. self-rising flour
2 sticks butter
1 c. granulated sugar (plus 1/2 c. for dusting cookie dough)
1 Tbsp. light brown sugar
1 large egg
1 1/2 tsp. vanilla extract
Preheat oven to 375 degrees. Cream butter, 1 cup granulated sugar and the
brown sugar at medium speed until light and fluffy. Add the egg and
vanilla. Add the dry ingredients; beat at low speed until combined.
Roll dough into 1 1/2-inch balls; flatten and dust with sugar,
spacing 2-inches apart on baking sheet. Bake 15 to 18 minutes.
