PAM'S CHEESE WAFERS

1 (10-ounce) block sharp Cheddar cheese, cut into
pieces
1 cup all-purpose flour
1/2 cup butter or margarine, softened
Pinch of salt
1/4 teaspoon ground red pepper

Shred sharp Cheddar cheese in a food processor. Process
cheese, flour, and remaining ingredients in food processor until
mixture forms a ball. Shape dough into 1-inch balls; place 2
inches apart on a parchment paper-lined baking sheet. Freeze on a
baking sheet, if desired, and place frozen balls of dough in
heavy-duty zip-top plastic bags; seal. Store in a freezer up to 1
month. Bake frozen dough balls at 400 degrees for 15 minutes. Bake
unfrozen dough balls at 440 degrees for 6-7 minutes. Let stand 2 minutes;
remove to wire racks to cool.

Yield: 3 dozen.
