1/3 cup cider vinegar
3 tablespoons sugar
1 1/2 teaspoons salt
3-4 pickling cucumbers
1 cup cauliflower pieces
1 red hot cayenne pepper, optional
Dressing: Mix all ingredients and blend well.
Vegetables: Peel and cut cucumbers into bite-size pieces; if
big cucumbers are used, remove seeds. Cut rest of vegetables into
bite-size pieces. Pour mixed dressing over vegetables; chill and
marinate at least 2 hours before serving.
Yield: 4 servings.
