4 cups peeled potato cubes 4 hard-boiled eggs, sliced 1/2 cup chopped red onion 1/4 cup chopped celery 1/4 cup chopped green pepper 1 cup mayonnaise 1 tablespoon cider vinegar 1/2 teaspoon dry mustard 1/4 teaspoon celery seed 4 tablespoons sweet pickle relish 1/8 teaspoon cayenne 2 teaspoons salt Bring water to boil, add potatoes and cook about 10 minutes just until done. Do not add salt when cooking. Drain in colander. Combine potatoes, eggs, onion, green pepper, and celery in a medium size bowl. Combine remaining ingredients in a small bowl and mix thoroughly. Pour over potatoes, stirring with a soft spatula. Mix well. Garnish with paprika. Better if served warm or room temperature. Yield: 6-8 servings.
