1 (8-ounce) carton sour cream
1 1/2 cups Hellmann's mayonnaise
1 1/2 teaspoons prepared horseradish
6-8 green onions with tops, finely chopped
3/4 cup celery, finely chopped
1 cup fresh parsley, finely chopped
9 medium red potatoes boiled, peeled and cubed
3-5 slices bacon, cooked and crumbled
Blend sour cream, mayonnaise, and horseradish to make dressing.
Set aside. Mix onions, celery, and parsley. In a 2-quart
casserole dish, layer in order 1/2 each of the potatoes, celery
mixture, and dressing. Repeat layers. Sprinkle with bacon and
chill several hours.
Yield: 10 servings.
