CHUNKY POTATO SOUP

3 tablespoons butter
1/4 cup all-purpose flour
4 cups milk
2 cups peeled, cubed baking potato
1/2 cup minced onion
3/4 teaspoon salt
1/2 teaspoon pepper

Melt butter in heavy saucepan over low heat; add flour,
stirring until smooth. Cook, stirring constantly, for 1 minute.
Gradually add milk, cooking over medium-high heat, stirring
constantly until warmed through. Stir in potato and next 3
ingredients. Cook over medium heat, stirring frequently for 30
minutes or until mixture is thickened and potato is done.

Yield: 5 cups.
