TURKEY CREOLE

1/2 cup green pepper, chopped
1/2 cup celery, chopped
1/4 cup onion, chopped
1 tablespoon butter
1 tablespoon all-purpose flour
1 (16-ounce) can tomatoes, chopped
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 bay leaf
Dash of pepper
Dash of hot sauce, optional
1 1/2 cups diced cooked turkey
6 servings cooked rice

In a large skillet, saute green pepper, celery, and onion in
butter until tender. Add flour and stir. Add tomatoes, sugar,
salt, garlic powder, bay leaf, pepper, and hot pepper sauce, if
desired. Cook until thickened and bubbly. Add turkey and cover,
simmering for 5-10 minutes. Serve over hot rice.

Yield: 6 servings.
